Sparkling Grape Cider — AVA New York

We had long wanted to make a Sparkling Grape Cider. Our grapes, local apples...Co-Fermented! We made one and it was delicious, but we wanted to make one even tastier and even more expressive. So, we did it again. Thrilled with the opportunity to work with luscious local apples grown and crushed right down the road at The Halsey Farm and The Milk Pail, we created this delicious sparkling grape cider made in a Method Ancestral style, also known as a Petillant Naturel.

This is a super delicious and fun wine. It is created from 32% Chardonnay juice and 68% apple cider fermented together wild. We wanted to call it "c/Hard Cider" a play on hard cider made with Chardonnay, but the federal regulatory bureau would not have it! We cherished the chance to work with the Halsey family and their incredible apples and cider. Jenn Halsey said there are many varieties of apples in the cider we received including; Red Delicious, Fuji, Mutsu, RubyFrost, Jonagold, Winesap, Granny Smith, Gala, Honeycrisp, Macoun, Snapdragon and likely quite a few others.

There are dynamic aromas and flavors reminiscent of both wine and cider and the interplay back and forth between the two is a delight to experience. The wine is dry and the aromas and flavors and fun just seem to be heightened by the bubbles. The wine possesses lower moderate alcohol at only 9.0% and delicious lively acidity that keeps you coming back for more. We only made 148 cases of this delicious sparkler.

While regulations do not allow us to put a vintage on this wine; all the fruit, both grape and apples, are from the 2021 vintage. We think this wine is pretty special and there are not too many examples of this magical combination of grape juice and apple cider grown so close together. 2021 Delaware — AVA Finger Lakes

Delaware is a very old American Hybrid pink-skinned, white wine variety. Delaware was quite popular from the mid 1800's on. In 1905, in the great book "The Grapes of New York", it was written "Delaware is the American grape par excellence...for there is no variety of vitis vinifera more richly or more delicately flavored or with more agreeable aroma than the Delaware." Our Delaware is made in the Methode Ancestral style and bottled at the end of its fermentation before it is complete, trapping the carbon dioxide in the bottle resulting in a lightly sparkling or Petillant wine. This delicious bottle of wine is lightly sparkling, dry, has juicy acidity and moderate barely 10% alcohol. The flavors are delicate and filigreed. There is a chalkiness and fine mineral, citrus fruit and green apple character along with just a touch of the "grapey" aroma telltale of these varieties. The wine is refreshing, inviting and scrumptious. Pair this sparkler with the raw bar, fresh goat and sheep milk cheeses, light vegetable dishes, fluke, Black Sea bass, trigger fish especially with fruit and vegetable slaws...would even be great with a pork chop and mostarda.

2021 Moscato Petillant Naturel

100% Muscat Ottonel
Oh yes we did...100% Muscat with bubbles. Straw colored, green inflections, inviting aromas and flavors of white flowers, tropical fruit, honeydew melon, grapes, pineapple, minerals and salty air. Crisp and bone dry, the refreshing acidity and alluring aromas keep you coming back for more of this super satisfying, fun white sparkling wine. While especially great with fried foods and the raw bar, you can pair this Moscato with just about anything from morning to noon, or tonight! 9% alcohol 188 cases produced.

2021 Diamond Petillant Naturel — AVA Finger Lakes

Diamond is a very old American Hybrid white grape variety. Over 100 years ago it was prized for sparkling wine production. In the tome "The Grapes of New York", it was written in 1905 that "Diamond is surpassed in quality and beauty by few other grapes. When to its desirable fruit characters are added its earliness, hardiness, productiveness and vigor it is surpassed by no other green grape." "Diamond is a hybrid between Vitis labrusca and Vitis vinifera; the touch of the exotic grape given by the Vinifera parents has been sufficient to give it the richness in flavor of the Old World grape and not overcome the refreshing sprightliness of our native grapes." We could not agree more! Our Diamond is made in the Methode Ancestrale style and bottled before the end of its wild fermentation before it is complete, trapping the carbon dioxide in the bottle resulting in a lightly sparkling or Petillant wine. This is a delicious, aromatic and playful bottle of wine. The alcohol is low at about only 9%, the acidity is mouth-watering and refreshing and the flavors and aromas are both wild and comforting, familiar and foreign all at the same time. Our Diamond is very lightly sparking, crisp, dry and what you smell and taste are mineral, citrus and tree fruits driven along with a mild "grapiness" that is alluring, cozy and crazy delicious together. Only 168 cases of this gem were made in 2021, so get it, chill it, drink it and "Shine bright like a Diamond".
