Christopher: Ok, hello beautiful people, here to do some tastings for the December wine club releases.
The classic Scuttlehole Chardonnay
2019 vintage, this is one of our workhorses, it’s been around with us since the beginning.
We love chardonnay, we love to celebrate chardonnay.
We love a clean, fresh style of chardonnay
So hand-harvested as always, fruit from both forks, Long Island AVA, fruit from our region expressing what chardonnay can be like in this unoak style, whole cluster-pressed, stainless steel fermented.
So super clean, delicious - apple, pear, maybe some lemon curd.
Just great, fresh, super versatile at the table.
You know, we pour this at so many restaurants, gets case-stacked at so many wine stores, because it goes with everything from shellfish to bluefish to salmon or char, to a lobster, to cut through things.
Great with fresh cheeses, fresh sheeps milk and goats milk cheeses
Great with a citrus roast chicken, or Chicken Milanese with a salad and a squeeze of fresh lemon.
Super versatile, really well priced.
Almost 1200 cases, so one of the you know, largest production wines we do, 1188 cases in the 2019 vintage.
So just a joyous, easy, versatile, delicious, youthful Chardonnay.

Tasting Channing Daughters 2017 Sculpture Garden
Christopher: Alright, good people - the other wine club release for December- Sculpture Garden, 2017 Sculpture Garden.
91% Merlot as always, 6% Teroldego, 3% Blaufränkisch. 148 cases.
So this is a true field blend: everything is grown together, picked together, pressed together, well actually, this isn’t pressed, we uh, it’s red fruit so it’s grown together, picked, bring it up to the crush pad, through the de-stemmer, lots of whole berries into little one-ton bins
— (whispers) Oh, it smells really good! —
We need to stomp on it, we get in there with waiters, stomp on it by foot, then we punch down by hand and shovel. Wild ferments in the bins until it’s dry, the cap falls; then we press off at that point, let it settle in the tank, then it goes into barrels.
This spent 17 months in primarily neutral oak barrels so really displays that wonderful red and black cherry and plum fruit from our region. A savory rather than a sweet profile, really showcasing our Long Island terroir.
Beautiful floral, berry, fruit, great raspberry, great cherry, great plum.
Gonna be delicious on fancier evenings with a rack of lamb or roast leg of lamb, or mushroom or grain dishes
Even like a beef terriyaki - you know, skewers and rice, that would be super delicious with this
But moderate alcohol
Medium-bodied. Really beautiful, some high-toned aromas, little bit of tar and resin.
Great with a prime rib, but you can also have this with a burger, you know, and you could have this with meatballs, I mean, really, super delicious.
Long Island duck, a great roast duck, or duck confit, or seared duck breast would be super delicious.
Really youthful, wine’s gonna definitely improve with age, I really encourage people to buy at least a few bottles of this, and drink one now and put some away to see how it ages over time.
So 2017 Sculpture Garden, excited about this wine both in its youth and how it’ll age over the next decade, so you know, buy 4, 6 bottles and take advantage of that and see how things develop - that’s one of the great things to see the evolving story of the wine over time.

Christopher: Ok, beautiful wine club, January 2021 wine club release -
Over & Over Variation 13

So really beautiful version of this wine
As you know, Over & Over is a ripasso and solera system wine.
So it all started with a couple barrels in ’04 that we let sit for two years into ’06, took those barrels and re-passed them over the fresh fruit of Merlot, and Syrah, and Dornfelder.
Let those sit for 10 months, then ran the scales basically blend them together, bottled half as Variation 1 and let the other half sit until the next vintage
- did that all over again: Variation 2
- And again over and over: Variation 3 and 4
- So Variation 13: fourteen primary fermentations, fourteen malo-lactic fermentations
- Going back to ’04, ’06, ’07, 8, 9, 10, 12, 13, 14, 15, 16, 17, 18, and 19 - vintages, memories of this.
Represents North and South, warm and cold, youthful and mature, old and new - all of those things sort of blend together in this wine so
Great, really silky, aromatic, darkly fruited, great black plum, black raspberry, black boysenberry, great spice
Just gonna be delicious with so many foods
From fish dishes to poultry dishes, to game dishes, to meat dishes, to grain dishes, mushroom dishes
You know, light and rich at the same time, this wine is full of paradox
Mouthfeel like silk and those beautiful, long-lasting flavors, you get secondary and tertiary notes of maturity from the fruit that’s been re-passed over and over, but still a real youthfulness from the wine.
So just beautiful, super fun, great story, read all about it.

Tasting Channing Daughters 2017 Sauvignon – Mudd West Vineyard
Christopher: Ok, good people
Tasting notes for January 2021, yes finally 2021.
2017 Sauvignon, so blended Sauvignon, 82% Sauvignon Blanc, 18% Tocai Friulano.
This is barrel-fermented, wild ambient fermentation, in barrels some of which are new 32% new French oak, 35% like two year old barrels, and the rest, 28% stainless steel barrels.
So blended together, fermented wild
Really beautiful, complex Sauvignon aromas, you get tree fruit, some tropical fruit, a hint of almonds likely from the Tocai, some sort of brown spice, some lemon curd, some peach, certainly some apple, and some citrus, really beautiful, complex Sauvignon for all seasons, many, many occasions.
Great mouth feel, medium-bodied, gonna be great with creamy, white, downy rind cheeses - cow, goat, and sheep.
Great with pasta dishes, herbed pasta dishes, Local seafood, Oysters Rockefeller,
Poultry, poached, roasted poultry
Smoked bluefish, smoked salmon, Arctic char, trout,
Green sauces, cream sauces
Super versatile at the table and you know, still got a lot of Sauvignon zip, but different than that stainless, like the Mudd Vineyard that we make - this is rounder, a little broader.
Great for the wintertime too

2017 Sauvignon
Tasting Channing Daughters 2017 Research Cab
Ok, next up - tasting the 2017 Research Cab for our November Wine Club shipment that we’re sending out to you guys.
So special wine, often a Wine Club exclusive. We don’t have much of it to go around, and that is true as of this vintage too. It looks like it’s really gonna be a bottle per wine club member. We only made 150 cases so there really isn’t much.
It comes from special Research Vineyard, basically a field blend of all these wonderful varieties, sometimes even white and there is a white variety in this year’s, Petit Manseng.
So this is 2017 Research Cab: 46% Merlot, 27% Cabernet Sauvignon, 14% Petit Verdot, 3% Cabernet Franc, 2% Blaufrankisch, 2% Barbera, 2% Petit Manseng that white grape I was speaking of, 2% Syrah, 1% Malbec and 1% Sangiovese.
All fermented together. Goes into basically all, old neutral oak. Just super satisfying. Kind of black raspberries, black plum, cherry, little bit of bramble fruit, little bit of spice.
Great texture, silky, moderate alcohol, good acidity.
Gonna be great with you know, lamb chops, especially herb-crusted lamp chops. Mushroom dishes, mushroom risotto, grain-based dishes. Veal, a nice veal chop would be delicious with this.
Silky palate. Like I was saying 25% new oak, 75% old, so mostly old, neutral oak, spent about 20 months, so almost 2 years in barrels. Was only moved once. Bottled on June 8th, 2019 so it’s had a little bit of time in the bottle, but it’s gonna certainly improve, but again there’s not much of it and it’s really hard to resist so I have a feeling it’s gonna go quick and you guys are gonna drink it. So hope you love it, enjoy 2017 Research Cab.
Tasting Channing Daughters 2017 Mosaico
Okay, good people, little tasting notes for the new Wine Club shipment.
So we’re super excited to be sending you out the 2017 Mosaico, here it is.
Beautiful, light golden color. 2017 vintage.
As always the field blend from the complanted block from the Sylvanus Vineyard so everything’s grown together, picked together, pressed together, vinified together to be an expression of that particular place of land, a vin de terroir if you will.
32% Pinot Grigio, 29% Chardonnay, 14% Sauvignon Blanc, 10% Muscat Ottonel, 7% Tocai Friulano and 8% Gewurztraminer.
298 cases so that’s the 2017 Mosaico.
Beautiful aromas you guys, super complex, fresh aromas of all kinds of fruit - citrus fruit, tree fruit, stone fruit, tropical fruit, touch of honey, touch of like brown baking spices. Gonna be super versatile at the table.
Just delicious, super delicious.
It’s early in the morning, and ya know, we’re working, so I’m still spitting a little bit but… I gotta drink it, it’s so damn good.
Any manner of fish and shellfish. Local stuff. Chicken dishes, pork dishes, veal dishes. Anything with a little bit of exotic spice to it, nothing too spicy, but some sort of aromatic you know, gingers, turmerics, some of those brown baking spices in like a pork dish or in a monkfish dish with pancetta, or something like that might be absolutely delicious.
So 2017 Mosaico, we hope you guys enjoy it. It’s gonna age well for a few more years, but it’s hard to resist right now. So drink it up, get some more and cheers!
Tasting Channing Daughters 2017 Research Bianco
Christoper: Hello, good people.
Beginning of September. Harvest is fast approaching and we’re sending you a new Wine Club shipment. So wanted to just give you a quick little intro to the two new wines that are coming your way.
First, we have the 2017 Research Bianco. Wow, super excited about this wine. Awesome, aromatic, tropical, stone fruit, tree fruit, really beautiful, skin-fermented white. Golden orange color, but really attractive, pronounced aroma so super gorgeous.
29% Tocai Friulano, 26% Sauvignon Blanc, 13% Chardonnay, 10% Gruner Veltliner, 9% Albarino, 5% Auxerrois, 2% Gewurztraminer, 2% Semillon, 2% Aligote and 2% Malvasia. Field blend of grapes grown at the Research Vineyard. Like the Research Cab, this is our grayscale partner, all the whites go into this. And skin-fermented ambiently, small 1-ton bins, 11 months in older oak. And just gorgeous.
Roast chicken, pork chops, charcuterie boards, fondue, grilled fish, really so many things to match. Oh! Great texture! You know, I mean, there’s some, a little bit of structure from the skin-fermentation but really beautiful, silky, kind of satiny textures, and like the dried apricot fruit, and pineapple and roasted pear, just super delicious.
Really hope you guys enjoy this one, 2017 Research Bianco - not a lot made so one of these special things. Only the third vintage of this wine for the Wine Club. So hope you guys love it as much as we do. Cheers.
Tasting Channing Daughters 2018 Dornfelder
Christopher: Alright, good people
Second wine in the September Wine Club shipment - yes, September 2020 - is the 2018 Dornfelder.
So Dornfelder is a German grape variety that we grow.
Darkly pigmented, kind of brambly, funky variety that’s great for blending in with Blaufrankish. And we’ve only released it as a varietal wine a few times before. Here we’ve blended in a little Zweigelt and Pinot Noir as well for some aromatic complexity, texture, acid balance, and this is a crisp, you know, youthful, little wine, super, like cranberry, strawberry, fruit, really reminds me almost like of a cru Beaujolais or regional Burgundy.
Yeah, really youthful, fun, kind of like I said, light red fruit aromas, a little bit of bramble, and kind of earth quality to it as well. Delicious with, and like I said, great, crisp, lively acid in this wine. So fatty foods, fatty fish, Arctic char, wild salmon would be awesome with this, like a Wild Boar Pappardelle would be delicious, any of those kind of game sausage would be amazing. Roast duck, a good Long Island roast duck with this, you know a fatty breast piece with this good juicy, kind of light tart cranberry fruit would cut right through that and be super delicious. So really charming wine, Beef Bourguignon, you know ‘cause it kind reminds me of a Burgundy. Or if you’re making Beef Stroganoff still, every now and then with that sour cream in there as well, that would be a hoot with a wine like this.
So again not a lot made, 188 cases. Dornfelder, fun, charming wine. It’s youthful, I think it’ll benefit from some time in bottle, help silken out kind of the acid and the tannins will soften and kind of silken. But if you’re gonna do it now, eat it with some fatty foods, maybe decant it. Or let it develop some bottle bouquet and some mellowness as well, you can go either way with it — so enjoy the 2018 Dornfelder.

Anthony: Howdy Christopher!
Christopher: What’d ya got there?
Anthony: I am trying the new “PetNat” Merlot/Lagrein blend
Christopher: Oh, perfect for this hot, muggy, humid day, right?
Anthony: Indeed, it is
Christopher: Oh and look at that, it opened nice and clean, right? No spill-over.
Anthony: Chilled extremely well
Christopher: Well, how’d we chill it, c’mon pick it up, show the people! ‘Cause we have no ice here. So what’d we do? Oh check it out, we got our ice packs, we put it in a bucket of water, and we chilled it for like 15 minutes. That was it, cold enough -
Anthony: - ready to go
Christopher: Ready to go and awesome! So how’s that 2018 Merlot/Lagrein “PetNat” taste this year?
Anthony: It’s a phenomenal wine. I’m a big fan of these “PetNats” and this one is absolutely delicious.
Christopher: I can’t resist man, keep talking. I’m getting a glass. Tell ‘em what’s in it.
Anthony: It is 80% - oh, 96% Merlot, 4% Lagrein. And a delicious blend.
Christopher: When do you like to drink these? What do you like to eat?
Anthony: Fun and playful! I like this pre-dinner, I have a little charcuterie board. Indeed, a great lower alcohol, keeps me, keeps me good for evening.
Christopher: Right, 11% you can drink this all day long. You can take it to the beach, you can drink it by the pool. You can make cocktails with this.
Anthony: So many things.
Christopher: You can blend it with some of our local spirits. You can make great cocktails with our Vermouth, with our VerVino with this. Great by itself. Great with food. Just a joyful, awesome, happy wine.

Tasting Channing Daughters 2017 Blaufrankisch, Sylvanus Vineyard
Christopher: Anthony!
Anthony: Christopher! How are ya?
Christopher: I’m awesome, how are you today?
Anthony: Doing well, doing well and tasting the new 2017 Blaufrankisch
Christopher: Awesome, on this muggy, humid, just starting to rain sort of day.
Anthony: Indeed, delicious
Christopher: Awesome, what do we have there?
Anthony: Well, we have 80% Blaufrankisch, 20% Dornfelder
Christopher: Sylvanus Vineyard, so all Hamptons fruit, all state fruit here.
Anthony: All Hamptons fruit, all grown and raised on the Hamptons estate.
Christopher: Awesome! Hand-picked, lots of whole berries, few whole clusters, stomped on by foot, punched down by hand. Super minimal, wild yeast, ambient fermentation. And what do you think, how’s it smell?
Anthony: It smells awesome. Has a nice cherry, black cherry, kind of ripened cherry profile.
Christopher: It’s got great structure but it’s gonna age well, still youthful wine, little bit of bottle age on it, but still super youthful.
Christopher: Great with all sorts of things, right? What do you like to eat with it.
Anthony: I paired it last night with a rack of ribs.
Christopher: Oh, that’s awesome! That is awesome! Yeah, we love it with ribs, pork, pork belly. I like it with fish - fatty fish, blue fish, smoked blue fish.
Anthony: Sure, sure
Christopher: Like aged cheeses, I think are awesome with it. Just a super versatile wine all around.
Anthony: And one of my favorites.

Anthony: We are tasting the 2019 Rosso Fresco
Christopher: Awesome, what’s in it?
Anthony: It’s a beautiful blend. It’s Merlot, Syrah, Petit Verdot, Cab Franc and Dornfelder
Christopher: Awesome, super fresh, crunchy, crushable, just easy to drink, goes with everything
Anthony: A delicious wine. I do it in the summertime chilled with my burgers and ribs off the grill
Christopher: Awesome point
Anthony: If not, it could be my Friday night pasta
Christopher: Oh, pasta! It goes with everything - pasta, pizza, burgers, grilled fish, veg. It goes by itself when you need to —
Anthony: When you need to just have a nice easy Red.
Christopher: Absolutely. Let’s see that color.
Christopher: It’s got a little bit more color than last year but still super light, fragrant, just easy-going, fun, crushable Red.
Anthony: And delicious
Christopher: That is awesome. This is like the Beatles, you know? It’s just popular from the early days, the easy listening, almost pop style music to you know Sgt. Peppers and Abbey Road and “Come Together,” right? I mean, this wine rocks so I hope you guys enjoy drinking it. Anth, got anything else to say about it?

Christopher: Alright so that’s the 2015 Meditazione we’re going to release to the Wine Club here in June, correct?
Anthony: Indeed it is.
Christopher: And uh, what do we got in there?
Anthony: We got a blend: Sauv Blanc, Pinot Grigio, and the Tocai Friulano
Christopher: Look at that color, can we see that color?
Christopher: Oh man! It’s like electric orange!
Christopher: What do you think, you know what this wine reminds of like George Clinton you know, or Bootsy Collins like it’s just got all that funky
Anthony: Funkadelic
Christopher: Psychedelic, Funkadelic, but it’s clean and fresh and beautiful, right? This is your first time tasting it?
Anthony: It is indeed - ahh smooth.
Christopher: Yeah it’s got great texture, sweet aroma but savory profile, awesome, great to eat with what, like nuts?
Anthony: Nuts, grains
Christopher: Seeds, grains
Anthony: Fatty fish
Christopher: Ooh, smoked blue fish, I made some, that would be great with this
Anthony: Smoked blue would work well
Christopher: Pork belly
Anthony: Aged cheeses
Oh man like hard aged goudas and stuff like that
Anthony: Phenomenal
Christopher: Oh man and this wine ages super well so it’s delicious now but what another 5 years in the cellar don’t you think?
Anthony: Easily, easily 5 or 10 years in the cellar would work well
Christopher: Come on, I want some more of that, can you pour me some

Anthony: Indeed it is, but not only that - it’s a great pairing wine. This is my go-to versatile white across the board pairings. I had this recently with some roasted pork.

Anthony: But definitely one of my go-tos, one of my easy wines to pair

Anthony: Indeed we have not, and it’s back and better than ever.
Christopher: Awesome! Tell us about it
Anthony: Completely refined, drinking beautifully right now. It’s a nice blend of Cab Sauv, Merlot, Petit Verdot, Syrah, Teroldego and that 1% of Blaufranksich.
Christopher: Yeah, it’s youthful wine, right? It’s gonna age beautifully - 5-10 years.
Anthony: Indeed it will, indeed it will.
I paired it recently with a nice bleu cheese, some fig spread and Orwasher's Bread.
Christopher: Awesome!

Christopher: And that would be great with a leg of lamb, huh? Ribeye steak.
Anthony: Ribeye steak.

Christopher: That’s awesome. And what’s on the label of that wine? Why do we call it Mudd?
Anthony: Well that is the soil break down
Christopher: That’s like the dirt that we grow it in, right?
Anthony: Indeed it is
Christopher: And we have the break down there right on the label so people can check it out and see what our soil’s made out of, the soil schematic there. And it’s also a celebration with our growing partners, right?
Anthony: Indeed it is
Christopher: Yes, so that Dave and Steve Mudd started Mudd vineyards, are super important to us and we like to celebrate our partnership with that wine, huh
Anthony: Indeed we do
Christopher: And what else do you find in that wine? Lots of nice blue, what kind of fruit?
Anthony: Notes of dark fruit - blackberry, blueberry, black cherry.
Christopher: Awesome.
Anthony: And an earthy profile. It’s delicious.
Christopher: That’s awesome, Anth. I know that people are missing coming in here and tasting with you and Laura and Kat and our whole crew and so it’s nice to see you here in the tasting room.
