2007 MUDD Vineyard Sauvignon Blanc
We know spring is close when its time to release our ever popular Mudd Vineyard Sauvignon Blanc. Even after a fairly mild winter we still long for those vernal pleasures that are just a few weeks away and a glass of our Sauvignon Blanc from the newest vintage will take you there a little early. This is a clean, crisp dry white wine with pronounced aromatics of citrus fruit, minerals, white flowers and herbs. Springtime in a glass! The wine was fermented in a stainless steel tank and two new Slovenian Oak Hogsheads (5%) and is comprised of 97% Sauvignon Blanc and 3% Musque Chardonnay (also from the Mudd Vineyard). The wine has great acidity, moderate alcohol and a persistent flavorful finish. It is a balanced Sauvignon Blanc with an intense character. As always, the fruit was hand-picked, whole cluster-pressed, handled minimally and bottled by gravity. This is a delicious, classically-styled Sauvignon Blanc that will be scrumptious with fresh chevre, asparagus & eggs, shellfish (both raw and cooked), spring vegetables and white-fleshed fish like fluke and porgies. 1258 cases produced.

2006 Sylvanus

Green melon with a drizzle of honey and a squeeze of lemon; fragrant honeysuckle in a garden of herbs and mint; a minerally, citrus blossom explosion with scents of orange zest and pith. These are the flavors and aromas evoked by our new Sylvanus. This is a dry, light-bodied white wine that is light straw in color and has intoxicating perfume. The enticing, alluring, sexy aromatics follow through on the palate with melon, herbs, white flowers, honey, minerals and citrus flavors. This is a juicy and delicious wine that has a lightness of being with a pronounced personality. There is a persistent finish and a wonderfully satisfying feeling that comes from eating or drinking the very bacchanalian Muscat grape. Do not over chill this wine or you risk masking the beguiling bouquet. The 2006 Sylvanus is a field blend comprised of 43% Muscat Ottonel, 44% Pinot Grigio and 13% Pinot Bianco. All the fruit was hand-harvested together from the Sylvanus vineyard on our estate in Bridgehampton. All the varieties were pressed and vinified together in six stainless steel 55 gallon barrels and six older French and Slovenian oak barriques. Try our Sylvanus as an aperitif or with oysters, clams and mussels, charcuterie plates, fresh soft cheeses, or simple white fish preparations. Sylvanus is not only the name of the wine, but the name of the vineyard and the legendary Green Man who this vineyard and wine honor. In creating a field blend, we are capturing the essence of our time and place within the context of the vineyard Sylvanus. Bottled January 25th, 2007. 238 cases produced.

2007 Pinot Grigio
Our Pinot Grigio is a perennial favorite and we are proud to produce a wine from this variety that offers depth of character and real personality. The 2007 version is clear and pale lemon in color with clean aromas and flavors of pears, white flowers, citrus, minerals and spice. This is a dry, medium-bodied white wine with medium acid and alcohol. The wine is flavorful and persistent with a delicious spice character on the finish. Our 2007 Pinot Grigio is created from 86% Pinot Grigio and 14% Chardonnay. All the fruit was hand-harvested and gently whole cluster-pressed. The Pinot Grigio juice was fermented in sixteen stainless steel barrels and two new and two older hogsheads made from Slovenian oak. The Chardonnay was fermented in a stainless steel tank. While still a creature of steel, the 22% that was in wood adds a wonderful spice, a textural component and complexing element. The wine spent seven months on its lees and was bottled by gravity on April 9th, 2008. This is a delightful, delicious, sprightly and refreshing Pinot Grigio that goes down almost too easily. Try this juicy, zippy white wine with fried foods, antipasti, lighter fish and shellfish, fresh soft cheeses, salumi and frittatas. Cheers! 568 cases produced.

2006 Tocai Friulano

We are thrilled to release the new vintage of our Tocai Friulano and it continues to be one of our most sought after bottlings. We are the only winery on the East End of Long Island growing and producing wine from this grape variety. Our 2006 Tocai Friulano is a dry, medium-bodied white wine full of aromas and flavors of citrus blossoms, green almonds, minerals and spice. This is a delicious wine with balanced alcohol, juicy acidity and a lingering finish. There is a beguiling saline sensation and after sipping your mouth is left clean and refreshed, ready for another taste. Our 2006 version was fermented in six stainless steel barrels, two one-year old Slovenian oak hogsheads and four older French oak barriques. Once again all the fruit was hand-harvested, whole cluster-pressed, handled minimally and bottled by gravity. Tocai is the quintessential prosciutto wine, whether it is from Parma or San Danielle, and it goes well with all manner of salumi and charcuterie. Try this wine as well with the Friulian cheese Montasio and the fricos one can make from it. Our Tocai also pairs well with shellfish and lighter fleshed fish dishes in addition to just about anything from a well-raised and well-fed pig. 208 cases produced.

2006 Sauvignon
Yellow flowers, spiced citrus, minerals and stone fruit make up the aromas and flavors of our 2006 Sauvignon. This is a dry, medium-bodied, complex and delicious white wine. The kiss of oak and the indigenous fermentation add a fascinating resinous quality to the classic herbal nature of Sauvignon Blanc. These are penetrating flavors and aromatics. This wine is made from 82% Sauvignon Blanc from new plantings at what is currently being called Mudd West as well as from the Croteau Farm Vineyard, and 18% Chardonnay (musque clone) from the Mudd Vineyard. The Sauvignon was fermented in four French and Slovenian older oak barriques, two new Slovenian oak hogsheads (these were fermented with wild yeast), and four stainless steel barrels. The Chardonnay was fermented in one older French oak puncheon. This is a unique expression of Sauvignon Blanc with great depth and breadth, a juicy and persistent finish and a lovely texture. This wine is delicious with charcuterie and salumi, fresh and aged sheep and goats milk cheeses, grilled striped bass, whole roasted tilefish, plates of grilled asparagus with fried eggs and balsamic, or a fresh gnocchi with green herbs. As usual all the fruit was hand-harvested, whole cluster-pressed, handled minimally and bottled by gravity. There were 290 cases produced and the wine was bottled on April 19th, 2007.

2006 Vino Bianco
After tasting the new 2006 Vino Bianco, we said to ourselves, “Boy, are we glad we were able to bottle this much VB!”. From its humble production of ninety-one cases back in 2001, this wine has grown in stature and complexity every year to become a flagship wine for us. The 2006 Vino Bianco is particularly exciting. This is a yummy, dry, medium-bodied white wine, light yellow in color. It offers complex, broad and deep aromas with high-toned accents. The 2006 version is made up of 27% Tocai Friulano, 26% Sauvignon Blanc, 22% Pinot Grigio, 19% Chardonnay (Dijon clone 96) and 6% Chardonnay (“Musque” clone). This really is a symphonic white wine that offers layers of texture and flavor. Minerals, citrus fruit, tree fruit, stone fruit and tropical fruit all play off one another. Often we smell and taste tangerines, yellow plums, white peaches, pineapple, juicy dripping pears, hints of vanilla, brown spice, honey and a magical floral quality, almost like acacia blossoms. The wine is clean with beautiful penetrating aromas. There is a soothing, mellow balance of acid, alcohol, ripe fruit and sweet spice. The wine is extremely long and possesses great texture, almost a geometric experience where there are round and angular aspects working together to create great mouthfeel. The fruit was all hand-picked from our home farm in Bridgehampton, the original Mudd Vineyard in Southold, the Smithens Vineyard and the new plantings at Mudd West on the North Fork. Some of the varieties were fermented separately, some were fermented together. Stainless steel tanks, stainless steel barrels, new and older French and Slovenian oak barriques as well as puncheons were all used and the various lots were then selected and blended. This wine displays great versatility at the table and can be paired with lighter fish and shellfish dishes or matched wonderfully with richer pastas, chicken, pork and veal preparations. The 2006 Vino Bianco was bottled on May 3rd, 2007. 969 cases were produced.

2007 Mosaico
There is something magical about a blended wine from one specific spot; the complexities, nuances and realities of site and vintage are expressed in a delicious and unique way. Mosaico is an exotic field blend that comes from the western complanted block in our Sylvanus Vineyard on our estate in Bridgehampton. This is a dry white wine with a clear, pale gold appearance. There are lots of clean, mineral driven aromas with exotic flourishes of melon and tangerine. The wine is medium-bodied with medium acid and medium alcohol. There is a seductive, polished mouthfeel and flavors that alternate between tree fruit, stone fruit, citrus fruit and florality. This wine is made from 32% Pinot Grigio, 29% Chardonnay, 14% Sauvignon Blanc, 12% Muscat, 7% Tocai Friulano and 6% Gewurztraminer. All the varieties were harvested together, pressed together and fermented together except for the Muscat. The Muscat was separated out and fermented on its skins, and after a stint in new oak, blended back in. Our 2007 Mosaico was fermented in a variety of vessels; a stainless steel tank and stainless steel barrels, two Slovenian oak barrels, two Slovenian oak hogsheads and one Slovenian oak puncheon. A total of 27% of the wine saw new oak. This wine is complex, playful and satisfying. There is great intensity of flavor and a wonderfully lengthy spicy finish. Mosaico is a great match for wild stripped bass, tilefish, roast chicken, sausages, stuffed pastas, pork and risottos. Salute! 568 cases produced.

2007 Scuttlehole Chardonnay
We love Chardonnay! Often we crave a pure, clean style that celebrates the fruit of our region and is very versatile at the table. Our 2007 Scuttlehole Chardonnay certainly fits the bill. This wine is fermented in stainless steel tanks with no malo-lactic fermentation resulting in a dry wine with flavors and aromas of minerals, green apples and lemon curd. This fresh, unoaked wine is medium-bodied with balanced acidity and alcohol. The wine is wonderfully juicy with the textural interplay of both linearity and roundness that provides great pleasure and interest. As always the fruit for this wine was hand-picked, whole cluster-pressed, handled minimally and bottled by gravity. Our 2007 Scuttlehole Chardonnay offers boundless pairing potential at the table. Comfortable with either complimentary or contrasting flavors, try this wine with crisp shellfish or oily bluefish; fresh cheeses, a citrus roast chicken or a spring salad with duck confit. 2006 Cuvee Tropical
If you are desiring a soft, round, aromatic and juicy white wine for all your exotic and spicy foods, look no further than our 2006 Cuvee Tropical. This is a flamboyantly fruited, exuberant white wine crafted mostly from a specially selected Musque clone of Chardonnay along with Muscat Ottonel and Pinot Grigio. This medium-bodied white wine has flavors and aromas of pineapple, melon, tropical citrus, white flowers and tree fruits. All the grapes were hand-harvested, whole cluster-pressed and fermented in a stainless steel tank and two new French oak barrels. The portion in barrel was fermented with indigenous yeasts. This is a yummy wine that matches exceedingly well with Indian, Japanese, Thai, Mexican and Chinese flavors. The tastes and texture of our Cuvee Tropical pair wonderfully well with the spiciness as well as the raw and clean flavors of these varied cuisines. This wine was bottled by gravity on January 29th, 2007 and 528 cases were produced.

2006 Brick Kiln Chardonnay

This has everything we are looking for in a straight-forward barrel-fermented Chardonnay. A beautiful, brilliant light gold color awakens you to the clean, fresh, youthful aromas of delicious ripe pears, golden apples, spices and flowers that are awash in a medium-bodied frame. The wine is dry, round, rich without being heavy, possesses juicy acidity, well integrated oak and balanced alcohol. This is an elegant chardonnay with a long and flavorful finish that offers a great deal of pleasure. Pair this one with salmon or scallops, mushroom and squash dishes, or a simple roast chicken. Drink this wine at fifty to fifty-five degrees and enjoy now and over the next three or four years. 2006 L'Enfant Sauvage Chardonnay
The New Year brings the release of our latest L’Enfant Sauvage, or wild child. Our 2006 version is light golden in color and awash in aromas of apples, pears, lemon drops, vanilla bean, white pepper, brown spice, baked brioche and some tropical fruit. This is a dry, rich, full–bodied white wine that was barrel-fermented with indigenous yeasts and raised in new French and Slovenian oak barriques for thirteen months. The wine possesses a viscous, satisfying texture that is balanced by good acidity and moderate alcohol. While delicious now the wine is quite youthful, really just a baby, and will benefit from two years in the cellar and then reward drinking for another five or six. As always this wine was created from hand-harvested grapes from our Sculpture Garden and Brick Kiln vineyards here in Bridgehampton. The fruit was whole cluster-pressed. The wine was handled minimally and bottled by gravity. Only 288 cases of this special Chardonnay were produced. Pair this wine with lobster, scallops, wild salmon, mushrooms, roast chicken and truffles with pasta or risotto. This is a wine dear to our hearts and we believe the L’Enfant Sauvage along with the Scuttlehole exemplifies the potential of the Chardonnay grape on Long Island in two distinctly opposite styles while still clearly expressing the same sense of place. 2006 Clones
“Clones” is an exotic white blend that is based primarily on ten distinct clones of Chardonnay and also includes five other grape varieties. The 2006 version is composed of 74% Chardonnay, 13% Sauvignon Blanc, 11% Gewurztraminer, 1% Aligote and a half percent each of Semillon and Pinot Noir. This is a delicious white wine that is alive with golden and red fresh and baked apples, brown spices, quince paste, litchi, pineapple, minerals and a touch of vanilla and honey. The wine possesses great texture and has roundness and richness on a lean and elegant frame. “Clones” is medium-bodied, has moderate alcohol and a juicy acidity that carries through a very long finish. All the fruit for this wine was hand-harvested, pressed and fermented together. Three stainless steel barrels, two new French oak barrels (which were fermented with wild yeast), two older French oak barrels and one French puncheon were used as aging vessels for ten months in the production of this wine. “Clones” is versatile at the table and performs as comfortably with striped bass or salmon as it does with a simply prepared grilled pork loin and fresh vegetables. 2006 Envelope
A wine to incite thought as well as pleasure, this exotic white is inspired by the “Vino da Meditazione” wines produced in Northeast Italy. We are always testing the boundaries to create deliciousness in our wines and we will continue to push the Envelope of what is possible in our vineyards, our cellar and our region. Our 2006 Envelope is a full-bodied, dry white wine that was made from hand-harvested Chardonnay (70%) and Gewurztraminer (30%) grapes that were de-stemmed and fermented on their skins in an open top fermenter. The wine was pressed off its skins after eight days and raised in seven French and Slovenian oak barrels for thirteen months (75% were new barrels). The Chardonnay came from our Sculpture Garden and Brick Kiln vineyards here in Bridgehampton and the Gewurztraminer came from a vineyard on the North Fork. This is a wildly aromatic wine full of stone & tree fruit, nuts, rose water, honey, flowers and spice. It has an intense personality and great balance between the moderate alcohol, medium acidity, ripe fruit and seamless structure, which leads to a persistent, concentrated finish. The 2006 Envelope matches well with fatty fish like Salmon and Char and works equally well with cured pork products, luscious pasta preparations and rich saucy chicken dishes. 158 cases produced. 6 bottle maximum per customer.

2006 Meditazione
Channing Daughters 2006 Meditazione Meditazione is a wine with wild, intoxicating aromatics. This dry, full-bodied white wine smells and tastes of dried apricots, citrus oil, crushed rocks, peach pit, white flowers, light caramel and brown spice. There are notes of chamomile tea and cider. The alcohol is moderate, the acidity zesty, the concentration intense and the length terrific. Meditazione is a great golden tone in color and is structured more like a red wine than a white. Wines like this are controversial. Meditazione is fantastically delicious and amazingly approachable and versatile at the table. But the wine has more than visceral appeals. Meditazione conjures conversation and history. Sometimes it sparks debate. All along it is alive, encourages awareness and celebrates our place. The wine was created from 36% Tocai Friulano, 25% Pinot Grigio, 17% Sauvignon Blanc, 10.3% Chardonnay, 9.5% Muscat Ottonel, 1.2% Viognier and 1% Malvasia Bianca. Meditazione is an exotic, non-traditional white blend inspired by the “Vino da Meditazione” wines in the Northeast of Italy. All the fruit for this wine was hand-picked, de-stemmed and the grapes were fermented together on their skins in an open top fermenter. This is how we make our red wines! Pressed off after eight days, the wine was raised in two new Slovenian oak hogsheads for thirteen months. This is a textured, aromatic and delicious white wine that appeals to both the senses and the intellect. 2007 Rosato di Cabernet Franc -Croteau Farm Vineyard
This is the raw-bar rosato! The 2007 is made from 100% hand-harvested Cabernet Franc grapes that were whole cluster-pressed and fermented in a stainless steel tank. This is a dry, crisp, medium-bodied Rosé. The color is the palest of the three Rosés and displays an elegant coppery, slightly salmon hue. In this vintage, as in the past, the flavors and aromatics of the Cab Franc are the lightest and most ethereal. This wine possesses a beautiful rocky-mineral, floral and citrus profile coupled with a long flavorful finish. There are alluring nuances of tropical white flowers and purple violets on the palate as well. Drink this wine as an aperitif or with shellfish, fluke, flounder, sushi, ceviches, fresh cheeses and fried foods. 178 cases made.

2007 Rosato di Merlot - Mudd Vineyard
The 2007 is created from 100% hand-harvested Merlot grapes that were whole cluster-pressed and fermented in a stainless steel tank. This is a juicy, full-bodied Rosé. This year the color is similar to that of the Cab Franc; very light but with a slightly pinker hue. The flavors and aromatics are watermelon, red plum, peach, spice and an earthy-minerality. The wine has a persistent finish, great character and a wonderful zing. In 2007 the Rosato di Merlot has the most alcohol and the most acid. Beautiful texture and delicious playful flavors define the most versatile of the three; pair this wine with almost anything…from tomatoes and mozzarella to hanger steak with chimichurri sauce or a simple plate of charcuterie. 488 cases made.

2007 Rosato di Cabernet Sauvignon -Mudd Vineyard
The rosato for the grill! Once again the 2007 is produced from 100% hand-harvested Cabernet Sauvignon grapes that were whole cluster-pressed and fermented in a stainless steel tank. This is a dry, medium-plus bodied Rosé. The wine has the most color of the three; a beautiful jewel-like pink. The nose is awash in strawberries, raspberries, currants, and earth; cinnamon, spice and that seasonal strawberry-rhubarb pie. Mmmm, mmm, good…This is a delicious, balanced and persistent wine. Match this one with smoked fish and heartier fare from the grill; beef, lamb, chicken, pork (ribs, oh yeah!), lobster, sausage, tuna, vegetables, and mushrooms. 389 cases made.

2006 Rosso Fresco
Rosso Fresco is an easy-going red blend whose varieties and proportions change with each vintage. The 2006 Rosso Fresco is created from 92.1% Merlot, 4.6% Blaufrankisch, 2.8% Cabernet Sauvignon and a half a percent of Dornfelder. The wine has a translucent light red color with purple overtones. This is a dry, medium-bodied, balanced and juicy red wine with plum, black cherry, black raspberry, Asian and brown spices, a touch of smoke and a slight meaty/gamey note. Rosso Fresco is a playful, full-flavored, friendly red wine that pairs well with pastas and just about any fish, fowl or four-legged food you serve it with. This delicious red wine spent eight months in mostly older French and Slovenian oak and delivers a silky texture with a rustic note. Our 2006 Rosso Fresco has great balance, impressive length and real character for a straight-forward red wine and thus offers a fabulous bang-for-your-buck opportunity. The fruit came from both our home farm in Bridgehampton and the Mudd Vineyard on the North Fork. All the grapes were hand-harvested, de-stemmed, crushed by foot, fermented in small one ton bins and punched down by hand. The wine was handled minimally and bottled by gravity on July 10, 2007. 2006 Blaufränkisch

We are the only winery on the East End of Long Island growing and producing wine from the beautiful Blaufrankisch grape. This is a middle-European grape variety most often found in Austria and also grown in Friuli under the name Franconia. Our 2006 bottling is made from 86% Blaufrankisch and 14% Merlot. This is a dry, medium-bodied, aromatic, light ruby red colored wine. There are sexy smells and flavors of sweet red cherry, plum, black raspberry, vanilla, spice, black pepper, liquorice, mint and a whiff of hung game. This is a juicy red wine with moderate alcohol that packs a lot of personality into a seemingly light and elegant package. The texture is alluring and silky. The tannins are soft and well-integrated. We recommend drinking this wine now and over the next three or four years. Especially wonderful are matches with sausages, duck, guinea hen, game birds, venison, pork, lasagna and roasted root vegetables. This wine was made from hand-harvested grapes from our Sylvanus and Sculpture Garden vineyards in Bridgehampton. The fruit was de-stemmed, crushed by foot, fermented and punched down by hand in small one ton bins and spent twelve months in two new and five older French and American oak barriques. The wine was handled minimally and bottled by gravity on October 30th, 2007. There were only 158 cases made of the 2006 Blau. Salute!! 6 bottle max per customer.

2005 Sculpture Garden
This Merlot-based blend comes almost entirely from the Sculpture Garden Vineyard on our Estate in Bridgehampton. It is one of the oldest vineyards on the South Fork. Our 2005 Sculpture Garden is a dry, medium-bodied red wine that is comprised of 97% Merlot and 3% Blaufrankisch. The wine possesses moderate alcohol, balanced acidity and great length. There are aromas and flavors of blueberries, plums, black cherries and black raspberries. Some brown spice, roasted meat, coffee and earth round out the flavorful profile. The tannins are plush and well-integrated. This wine was made from yields well under two tons per acre and all the fruit was hand picked, de-stemmed, crushed by foot and punched down by hand. Our 2005 Sculpture Garden spent twenty months in French and Slovenian oak barrels and was bottled by gravity, unfined and unfiltered, and may throw a sediment. This yummy and satisfying red wine is dynamite with duck, pork, mushrooms, potatoes, salmon, char and anything with pancetta. Cheers! 208 cases produced. $30/bottle. 1 case max per customer.

2005 Research Cab

There were four precious barrels that led to 96 cases of our delicious 2005 Research Cab. This year the wine was created from 25.5% Cabernet Sauvignon, 53% Merlot, 20% Dornfelder and 1.5% Sangiovese. The Research Cab is a dry red wine in which the varieties and proportions change with each vintage. A friend supplied the Cabernet Sauvignon, Merlot and Sangiovese from a “research” vineyard on the East End. The Dornfelder is from our estate in Bridgehampton. This is a yummy, ripe, complex wine with a purple color and alluring aromas of blueberries, black plum, black cherry, black currant, blackberries and minerals. There are beautiful brown spice, vanilla and pepper flavors along with well integrated smoky notes. The wine has a silky texture, medium body, moderate alcohol, balanced acidity and fine tannins. There is satisfying persistence on the palate and the wine is drinking fantastic now and has the structure to improve in the bottle for five to seven years. Our 2005 Research Cab would be superb paired with duck, squab, lamb, mushrooms, grains and vegetable gratins. All the fruit was hand-picked, de-stemmed, crushed by foot and punched down by hand. The wine was bottled by gravity, unfined and unfiltered on June 26th, 2007. The wine may throw a sediment and will benefit from decanting. 2004 MUDD

A beautiful, brilliant ruby red color with purple inflections catches the eye as you pour our 2004 MUDD into a glass. Then aromas of plum, deep red cherries, black raspberry, cinnamon and black pepper hit you as you smell the wine. Take a sip and all the bramble fruit, cherry and plum come alive with freshness and purity. A silky, medium body caresses your palate with ripe flavors, supple tannins, integrated oak and one can appreciate the balanced acid, alcohol, fruit components and complexity. The finish lingers and you long for another sip. Braised meats, game birds, lamb, pork, mushrooms and hearty grains alongside roasts dance through your mind as you think about pairing this wine with dinner. Our MUDD is a distinctive red blend whose varieties and proportions change with each vintage. This year the wine is comprised of 28% Cabernet Sauvignon, 61% Merlot, 4% Cabernet Franc, 4.5% Blaufrankisch and 2.5% Dornfelder. The Cabernet Sauvignon always comes from the Mudd vineyard in Southold on the North Fork, which was planted in 1975 primarily on its own roots. The Merlot, Blaufrankisch and Dornfelder come from our estate in Bridgehampton. Additional Merlot came from Sam McCullough's vineyard in Aquebogue. As usual all the fruit was hand-picked, de-stemmed, crushed by foot and punched down by hand. Our 2004 MUDD was raised in a variety of French oak barrels for twenty months which were predominately one year old with small amounts of new, two and three year old wood also employed. 348 cases were produced and the wine was bottled by gravity on July twenty-first, unfined and unfiltered, and may throw some sediment. Drink this wine now and over the next 5-7 years. One case max per customer.

Over & Over-Variation 1

In our search for more delicious, complex and interesting red wines we are finally ready to present you with Variation One of our new wine, Over & Over. Over & Over is the result of both a ripasso project and a solera system. It all began with four barrels of 2004 Sculpture Garden Merlot, three of which were taken out of the barrel and re-passed over the fresh 2006 Merlot and Dornfelder fruit. The wine underwent another primary fermentation and was pressed and racked to barriques, hogsheads and puncheons where it underwent another malo-lactic fermentation. All the wine was blended and half was taken and bottled after ten months in oak. The other half has now been re-passed again over the fresh fruit from the 2007 harvest. Half will be bottled again next year and this will go on Over & Over. So what do we have in the bottle we label Variation One? A dry purple colored wine with red inflections and great clarity whose pronounced aromatics defy description of one grape variety. This vivacious and alive wine has elements of the old and the new, the warm and the cool, the north and the south. Over & Over can almost be imagined as a cool climate Chateauneuf-du-Pape. There are seductive spice market aromas and flavors of red and black plums, blackberries, blueberries and dried black cherries. There is a youthfulness to the wine but something mature at the same time. Black pepper notes, integrated oak, florality, citrus zest and a touch of underlying roasted bones/meat stock add complexity to this seductive and sultry wine. There are very fine almost hidden tannins that come out when you chew the wine and an intriguing fresh tobacco leaf quality. A little more alcohol is present in this medium plus bodied wine and we are very proud of its unique character and luscious qualities. Delicious now and over the next five to six years we recommend drinking at cellar temperature with simply prepared meat, game or mushroom dishes. Cheers! 122 cases produced.
